France has the deepest chef-à-domicile culture in Europe, and the hardest audience to impress with technique alone.

Cooking Italian food for a French table is a particular kind of pleasure. The expectations are high and specific, and the conversation about the menu is usually the best part of the job.

I do not try to out-French a French kitchen. I bring Sicily, and I bring the French technique underneath it — which is where most of my training sits anyway.
